Creamy Scrambled Eggs

6 | | Eggs |
1/2 | cup | Evaporated milk |
1/2 | tsp | Salt |
| dash | Pepper |
2 | Tbsp | Butter or margarine |
- Beat together eggs, milk, salt and pepper.
- In a 10-inch skillet, melt butter. Pour egg mixture into hot skillet
but immediately turn heat to low.
- Cook over low heat, gently stirring eggs occasionally, until cooked.
Makes 3 servings.
- Note: The secret to fluffy, tender scrambled eggs is
cooking over low heat and gently lifting and turning to set egg mixture.
Too much stirring can cause fluffy eggs to break down and separate.
