County Fair Breakfast

Sharp Cheddar cheese, grated

Lean Bacon

Onion, chopped

Tomato, finely chopped

Boiled potatoes, cubed
Salt and Pepper to taste
Fry the bacon, drain and break into small pieces. Return bacon and one tablespoon of fat to the pan.
Add the onions, tomatoes and potatoes and saute until potatoes start to brown.
Add the cheese and salt and pepper to taste.
Lightly beat the eggs and add to the mixture. Stir constantly until eggs are done.
Serve with buttered toast or biscuits. Makes four servings.
