Brunch Sausage Casserole

Tennessee Pride Country Sausage (mild or hot)

chopped onion

cooked rice
2
c
crispy rice cereal
2
c
shredded cheddar cheese (8 oz)
1
can
condensed cream of celery soup (10-3/4 oz)
1
can
evaporated milk (12 oz)

eggs, beaten
Grease a 3 quart baking dish.
Cook sausage in a skillet until browned. Remove with slotted spoon and drain on paper towels.
Cook onion in drippings in skillet until tender.
Combine sausage, onion, rice, rice cereal and cheese in large mixing bowl.
Stir in soup, milk and eggs; blend well.
Pour into prepared baking dish.
Bake 30 to 35 minutes or until bubby and heated through.
Makes 10 to 12 servings.
