Blender Pancakes

Serve the pancakes with maple or fruit syrup
1 | | Egg |
1 | | Egg white |
1½ | C | Plain low-fat yogurt |
3 | tbsp | Vegetable Oil |
1 | C | All-purpose flour |
1/4 | C | Sugar |
1½ | tsp | Baking powder |
1/4 | tsp | Baking soda |
1/4 | tsp | Salt |
1 | C | Old-fashioned rolled oats |
| | Maple syrup or fruit syrup |
- Combine the egg, egg white, yogurt, and oil in blender; whirl until smooth. Add the flour, sugar, baking powder, baking soda and salt; whirl to blend. Add the oats; whirl briefly just to mix.
- Heat a griddle or large skillet over medium heat. Lightly brush with vegetable oil. Spoon about 3 tablespoons batter for each pancake onto griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip over; bake until browned, about 2 minutes. Keep warm until all pancakes are cooked.
Makes 4 servings.
