Bacon and Cheese Sauce

Quick and easy for breakfast or a brunch buffet. Everyone likes this great sauce over toast, English muffins,
hot biscuits.
8 | slices | Bacon |
1 | small | Onion, finely chopped |
1 | can | Mushroom soup |
3/4 | C | Milk |
6 | Large | Eggs, hard-boiled and sliced |
2 | C | Cheddar cheese, shredded |
| | Salt and Pepper to taste |
1 | 2 oz jar | Pimientos, shredded |
1/4 | C | Pecans, finely chopped |
- Fry, drain and crumble bacon.
- Saute onion in 2 tbsp. bacon drippings.
- Stir in milk and soup, mixing well.
- Stir in the sliced eggs and cheese.
- Top with crumbled bacon, pimientos and pecans.
- Bake in 350 degree oven for 20 minutes.
- Serve while hot over toast, English muffin or biscuits.
Makes 6 to 8 servings.
