Apple Cheddar Quiche

Tart apples, sliced

butter

Partially baked 10" pie crust

C
Grated sharp cheddar cheese

Eggs
2
Egg yolks
1
C
Cottage cheese
1½
C
Half and half
1
tsp
Sugar
1/4
tsp
Cinnamon
dash
Salt
In a medium frypan, saute apples in butter for 5 minutes. Place in pie crust and top with cheddar cheese.
In mixing bowl, beat together eggs, egg yolks, cottage cheese and half and half. Pour over apples and cheese in crust.
Combine the cinnamon and sugar. Sprinkle over filling. Bake at 375 degrees for 35-45 minutes until firm.
Serves 6
