Kids love these pizza flavored beans.
1 | lb. | pinto beans |
31/2 | c. | water |
4 | chopped tomatoes | |
1 | chopped onion | |
1/4 | c. | chopped red or green bell pepper |
1 | clove | garlic, crushed |
1 | tsp. | salt |
1/2 | tsp. | dried oregano |
1/4 | tsp. | dried rosemary |
1/2 | tsp. | dried basil |
11/2 | c. | Mozzarella cheese, shredded |
1/4 | c. | Parmesan cheese, grated |
Rinse beans and remove anything that is not a bean. Soak beans in water overnight at room temperature.
In a Crockery Pot, mix everything EXCEPT the Mozzarella and Parmesan. Cover and cook on high 6 to 7 hours or until beans are tender.
Top with Mozzarella, then with Parmesan cheese. Cover and cook another 10 minutes or so until cheese melts.
Makes 10-12 side dish servings or 6-8 main dish servings.
