1 | lb. | dry beans, soaked overnight |
4 | c. | cold water |
1 | lg. | onion, chopped |
1 | can | tomatoes (16 oz.) |
2 | cloves | garlic, minced |
2 | tsp. | chili powder |
2 | tsp. | salt |
2 | tsp. | ground cumin |
1/4 | lb. | salt pork or bacon, chopped (optional) |
Put all ingredients in Crockery Pot. cook on high for about 2 hours, then turn to low and cook for 8 hours.
These beans can be partially mashed and used as a low-fat alternative to refried beans.
