At least one member of the family always brings this to family gatherings.
3 | lg. | red snapper or flounder fillets (11/4 to 11/2 lbs.) cut into 2" pieces |
2 | tbsp. | olive oil or melted butter |
1 | clove | garlic, minced |
1 | lg. | onion, sliced |
1 | green pepper, cut in 1" pieces | |
1 | zucchini squash, unpeeled and sliced | |
1 | can | whole tomatoes (15 oz.) |
1/2 | tsp. | leaf basil |
1/2 | tsp. | leaf oregano |
1 | tsp. | salt |
1/8 | tsp. | pepper |
1/4 | c. | dry white wine |
1/2 | c. | fresh mushrooms (up to 3/4 cup) |
Combine all ingredients in Crockery Pot. Stir gently, but thoroughly. Cover and cook on high for 4 - 6 hours. Makes about 3 quarts or 6 servings.
