My family devoured this. The original recipe did not call for onions, but, hey, what's a recipe without onions? Next time I make it, I might add another pound of smoked sausage. We are a family of five, and we had no leftovers.
Editors Note: This is wonderful!! Even my pickiest eaters liked it. I didn't have cherries so made it without. Was in a hurry so I cooked it on high for about 11/2 hours. Definite repeater.
2 | lbs. | kielbasa or smoked sausage, sliced |
1 | cup | pineapple juice (I used the juice from a 20-oz. can of pineapple chunks) |
1/4 | cup | lemon juice |
3 | tbsp. | cornstarch |
1/2 | cup | brown sugar |
1/4 | tsp. | salt |
1 | can | pineapple chunks, 20 oz. size (don't forget to reserve the juice!) |
1 | large | green pepper, cut into chunks |
1 | large | onion, cut into chunks |
1/2 | cup | maraschino cherries, drained |
Cook sausage until almost done. Drain grease.
Cook juices, cornstarch and brown sugar until thick. (I brought it to a boil.) Stir in salt.
Put sausage and fruit and veggies in Crockery Pot, then pour juice mixture over. Cook on low until serving time. (I let it cook 4 hours.)
Serve over rice.
