Rum Fudge Pudding

1/2 | C | Self-rising flour |
1/4 | C | Unsweetened cocoa powder |
6 | tbsp | Butter, softened |
1/3 | C | Granulated sugar |
1 | | Egg |
2 | tbsp | Dark brown sugar |
1/2 | C | Chopped walnuts |
1 1/4 | C | Hot coffee |
2 | tbsp plus 2 tsp | Sugar |
3 | tbsp | Rum |
- Preheat oven to 325 F. Grease a 5 quart ovenproof dish.
- Sift flour and cocoa into a medium-size bowl. Add butter, granulated sugar and egg and beat thoroughly, about 2 minutes. Turn into greased dish and sprinkle with brown sugar and chopped walnuts.
- In a small bowl, mix coffee, sugar and rum. Carefully pour over pudding.
- Bake in preheated oven 50 - 60 minutes, until firm to touch in center. Sprinkle with confectioner's sugar and serve hot with whipped cream.
