Pumpkin Walnut Cookies

Pumpkin Walnut Cookies |
1/2 | C | Margarine |
1 1/2 | C | Brown sugar, packed |
2 | lg | Eggs |
1 | tsp | Vanilla |
2 1/2 | C | Sifted flour |
1 | tsp | Salt |
1 1/2 | tsp | Pumpkin pie spice |
1 | C | Canned pumpkin |
1 | tsp | Grated lemon peel |
3 | tsp | Baking powder |
1/4 | tsp | Ginger |
1 | C | Chopped walnuts |
1 | tsp | Lemon juice |
- Cream butter and sugar together until fluffy. Beat in eggs, one at
a time. Stir in pumpkin, vanilla, lemon peel, and juice. Resift flour
with baking powder, salt and spices and blend into butter mixture. Stir
in nuts.
- Drop by tablespoonfuls onto greased baking sheets 2" apart. Bake at
375 for 12-14 minutes.
Makes about 2 1/2 to 3 dozen.
To decorate: Spread cookies with Vanilla Butter Cream Frosting and
dip into walnut pieces.
Vanilla Butter Cream Frosting |
2 | tbsp | butter |
1 | tbsp | Milk |
Approx. 1/2 | box | Powdered sugar |
1/2 | tbsp | Vanilla |
- Melt butter and add milk. Add powdered sugar (about 1/2 a box or
so) and vanilla.
