Pecan Brittle

sugar

cups
light corn syrup
3
sticks
butter (1 1/2 cups)

teas.
salt
1-1/2
teas.
baking soda
1-1/2
teas.
vanilla flavoring

pound
pecans, broken and heated in a 200 degree oven until warm
Use a large pan – combine sugar and corn syrup, it takes a while to liquefy. Cook to 310 degrees, stirring constantly.
Add butter; continue cooking, stirring constantly to 290 degrees.
Remove from heat; stir in salt and soda, vanilla and nuts.
Beat quickly, and spread out on two heavily greased cookie sheets. Break apart when cool.
Makes 3 pounds and takes about 45 minutes to make.
