Preheat oven to 350 degrees. Spray a 10-inch pie dish with
butter-flavored cooking spray; set aside.
In a medium mixing bowl, combine 1 1/4 cups flour and 1 cup sugar.
Stir in 2 teaspoons of baking powder. Mix well to combine dry ingredients.
In a separate mixing bowl, combine 1 cup of evaporated skim milk and
1/4 cup of melted reduced-calorie margarine.
Add moist ingredients to the dry ingredients and stir until smooth.
Pour mixture
into pie dish.
Add peaches to mixture and cover with mixture. Top mixture with
blueberries and bake for 50 minutes or until batter rises through the
fruit and is golden brown.
