From the Kitchen of: Paddy
Source: This recipe was given to me by my late Mother-In-Law. My husband and sons love it and it is a much asked for pudding.

Butter

Milk

Pyrex dish
Fill dish 3/4 full with fine bread crumbs
And zest of one whole lemon
apricot, or peach jam (your favorite)

Heat oven to 350°.
In a small sauce pan, bring the first three ingredients to a boil. Take off the heat and add vanilla and stir just enough into the bread crumbs. The mixture must not be to stiff nor to runny as it will firm up a bit with standing. Allow to stand for at least 1 hour.
Separate the four eggs putting the yolks plus the whole egg into the bread mixture and mix very well, put into oven for 1 hour (+ or -). Top should be golden brown.
Take out of oven and spread with your favorite jam. Beat the four egg whites with 4 tablespoons of sugar until stiff. Top mixture with meringue and return to oven until top is golden brown, serve hot with custard or cream.
