This is a favorite. Hubbie eats them by the handfulls. These are low fat & low cholesterol. They are a soft cookie. Sooo Good too!
1/4 | Cup | Oil |
1 1/2 | Cups | Brown sugar |
3 | Egg | Whites |
1/4 | Cup Plus 2 Tbsp. | Milk (skim) |
1 3/4 | Cup | Flour, sifted |
1 | Tsp. | Cinnamon |
2 | Tsp. | Baking powder |
1 | Tsp. | Nutmeg |
3 | Cups | Quick cooking rolled oats |
1 | Cup | Raisins |
1/2 | Cup | Walnuts, chopped (optional) |
Mix oil, sugar & egg whites together until sugar is dissolved. Stir in milk. Sift together dry ingredients; Stir into creamed mixture. Stir in oats, raisins and nuts (if desired). Drop from tablespoon 2 inches apart on lightly greased cookie sheet. Bake in hot oven (400 degrees) about 8 minutes. Cool slightly; remove from pan. Makes about 3 dozen cookies.
