Soft and chewy oatmeal cookies.
1 | Cup | Butter or margarine |
1/4 | Cup | White sugar |
3/4 | Cup | Brown sugar |
1 | Small pkg. | Instant vanilla or butterscotch pudding |
1 1/4 | Cups | All-purpose flour |
1 | Tsp. | Baking soda |
3 1/2 | Cups | Rolled oats |
1 | Cup | Raisins |
1 | Cup | chocolate chips, OR |
peanut butter chips (optional) |
1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
2. Cream the shortening or the margarine with the white and brown sugars. Beat in the dry instant pudding mix and beat until fluffy. Beat in the eggs.
3. Stir the flour and baking soda into the creamed mixture and mix well. Stir in the oats. Stir in the raisins. Dough will be stiff.
4. Drop spoonfuls of the dough onto the prepared baking sheet. Bake at 350 degrees F (175 degrees C) for 8 to 12 minutes.
