The following recipe is over 100 years old and was given to me by my Mother-In-Law some 42 years ago and has become family favorite.
2 | Cups | Flour |
1 | Tsp. | Cinnamon |
1/4 | Tsp. | Nutmeg |
1 1/2 | Tsps. | Salt |
1 | Tsp. | Baking powder |
1/4 | Tsp. | Baking soda |
1 | Cup | Sugar |
2 | Eggs | |
1 | Cup | Shortening |
1 | Cup | Bananas (mashed) |
2 | Cups | Quaker oats |
1 | Cup | Chocolate chips |
1/2 | Cup | Walnuts, chopped (optional) |
In a bowl, combine shortening, eggs and sugar; blend well. Add bananas. To this mixture, add cinnamon, nutmeg, salt, baking powder and baking soda. Mix well. Add the flour one cup at a time. Add the chocolate chips and walnuts. After blending well, add the oatmeal. Bake at 375° for 10-12 minutes or until light brown. Do not overbake. These are a very moist cookie and will freeze well.
