This microwaveable pudding is so easy and delicious, you will never go back to the instant!
1 1/2 | Oz. | Unsweetened chocolate |
2 1/2 | Cups | Skim milk |
1/2 | Cup | Double strength coffee |
(1 tsp. instant coffee dissolved in 1/2 cup hot water) | ||
1/4 | Cup | Cornstarch |
3/4 | Cup | Sugar |
1/8 | Tsp. | Salt |
Place chocolate in large microwaveable bowl and microwave at medium (50% power) for 2 to 3 minutes. Whisk the milk and coffee into the chocolate. In a separate bowl, combine the cornstarch, sugar and salt; add this to the milk mixture. Microwave the entire batter on HIGH for 4 minutes. Whisk the mixture and continue cooking on HIGH for 6 minutes, whisking each minute until pudding thickens. Pour the pudding into a serving dish and cool. Put into refrigerator for at least one hour.
