Lemon Cheese Delight

From the Kitchen of: Tyshee

1	pkt	Knox unflavored gelatin
1/2	cup	cold water
		whites from 2 eggs
2	8-oz pkgs	cream cheese, room temperature
1/2	cup	sugar
1/2	tsp	vanilla
		grated zest from one lemon
1/3	cup	freshly squeezed lemon juice with pulp
1/4	cup	cold milk or cream
1	cup	whipping cream
1		prepared crumb crust (optional)
		lemon sauce (optional

Soften gelatin in cold water. Stir over low heat until completely dissolved. Set aside
Combine cream cheese, sugar and vanilla and beat until blended
Gradually add the gelatin mixture, lemon juice, milk or cream and zest. Beat to blend
Put this mixture into the refrigerator remembering to stir occasionally until thickened but not set. When thick, beat until smooth
Beat egg whites until stiff peaks form
Whip the cream
Fold the egg whites and whipped cream into the cheese mixture
Pour this mixture into a prepared crumb crust or into a lightly oiled mold
Chill until firm. May be served with a lemon sauce if desired
