1 | Cup | White sugar |
1 | Cup | Brown sugar, firmly packed |
2 | Eggs | Well beaten |
1 | Tsp. | Vanilla |
2 | Cups | Flaked or shredded coconut |
2 | Cups | Corn flakes, slightly crushed |
Sift together flour, soda, salt and baking powder. Cream shortening and sugars. Beat until light and fluffy. Add eggs and vanilla. Combine dry ingredients with creamed mixture; add coconut and corn flakes (these are best folded in). Drop by small teaspoons on cookie sheet, 1 1/2" apart. Bake at 350° for 8 to 10 minutes or until lightly browned. Makes approximately 8 dozen cookies.
