Fold caramel ice-cream topping into whipped topping in a small bowl. Layer cookies, whipped topping mixture and peaches in 6 parfait or other tall glasses. Sprinkle with cookie crumbs if desired.
Serve immediately, or refrigerate until ready to serve.
