Mom's Boiled Custard

1 | qt | Milk |
1/8 | tsp | Salt |
4 | | Eggs |
1/2 | C | Sugar |
2 | tsp | Vanilla |
- Pour milk into a deep container (a 3 pound metal shortening can
works
well).
- Place container of milk in another larger container.
- Fill outside container with water to the same depth as milk in the
can.
- Cover and heat.
- Bring water to a simmer, not boiling.
- When milk is warm, beat the eggs until light and foamy.
- Stir eggs into milk.
- Continue cooking and stirring until mixture will coat a metal spoon.
Remove from heat; stir in sugar and vanilla.
- Cool rapidly to stop the cooking.
