4 | Cups | Blackberries |
1/2 | Cup | Maple syrup |
2 | Tbsp. | Water |
2 | Tbsp. | Corn starch |
1 | Tbsp. | Lemon juice |
1 | Tsp. | Vanilla |
2/3 | Cup | Rolled oats |
1/2 | Cup | Wheat germ |
Place the blackberries in a large bowl. Drizzle with 1/4 cup maple syrup and toss lightly. In a cup, mix the water, cornstarch, lemon juice and vanilla. Pour over the blackberries and mix well, being careful not to crush the berries. Coat a 1½ quart casserole with no-stick spray. Add the berry mixture. In a small bowl, mix the oats and wheat germ. Drizzle with the remaining 1/4 cup maple syrup and toss well to moisten the dry ingredients. Sprinkle over the berries. Bake at 350° for about 25 minutes, or until the filling is bubbly and thickened.
