Biscotti L'Orange

1 | C | Sugar |
1 | tsp | Grated orange rind |
1 | tsp | Vanilla extract |
1/2 | tsp | Orange extract |
3 | | Eggs |
3 | C | All-purpose flour |
1/2 | C | Chopped walnuts |
3/4 | tsp | Baking soda |
1/4 | tsp | Salt |
| | Vegetable cooking spray |
- Combine first 5 ingredients in a large bowl; beat at medium speed ofa mixer until well-blended.
- Combine flour, walnuts, baking soda, and salt; gradually add tosugar mixture, beating until well-blended.
- Turn dough out onto a lightly floured surface, and knead lightly 7times. Shape dough into a 16-inch long roll, and place on a bakingsheet coated with cooking spray; flatten roll to 1-inch thickness.
- Bake at 350 degrees for 30 minutes. Remove roll from baking sheet;let cool 10 minutes on a wire rack.
- Cut roll diagonally into 27 (1/2-inch) slices, and place, cut sidesdown, on baking sheet.
- Reduce oven temperature to 325 degrees, and bake 10 minutes. Turncookies over, and bake an additional 10 minutes (the cookies will beslightly soft in center, but will harden as they cool). Remove frombaking sheet, and let cool completely on wire rack.
- Yield: 27 cookies (serving size: 1 cookie).
