Heat oven to 350 degrees F.
Stir pudding mix into milk in medium saucepan. Stir in egg yolks.
Stirring constantly, cook on medium heat until mixture comes to full
boil. Remove from heat.
Arrange layer of cookies on bottom and up sides of 2-quart baking
dish. Top with 1/2 of the banana slices; top with 1/3 of the pudding.
Repeat layers, ending with pudding.
Beat egg whites and salt in medium bowl with electric mixer on high
speed until foamy. Gradually add sugar, beating until stiff peaks
form. Spread over pudding, sealing to edge of dish.
Bake 10 to 15 minutes or until meringue is lightly browned. Cool on
wire rack. Serve warm or refrigerate, if desired.
Before serving, garnish with additional banana slices dipped in
lemon juice to prevent darkening, if desired.
