Apricot Meringue Squares

Makes 25 squares

All-purpose flour
1/4
C
Powdered sugar
1/4
C
Margarine, softened
1
Egg white
2
Egg whites
1/2
C
Granulated sugar
1/2
C
Apricot jam
3
Tbsp
Miniature semi-sweet chocolate chips
Heat oven to 350 degrees F. Spray square 9x9x2 inch pan with non-stick cooking spray.
Mix flour, powdered sugar, margarine, and one egg white. Press in pan.
Bake about 15 minutes or until set.
Increase oven temperature to 400 degrees F. Beat 2 egg whites until foamy.
Beat in granulated sugar, 1 tablespoon at a time. Continue beating until stiff and glossy.
Spread jam over baked layer. Sprinkle with chocolate chips.
Spread meringue over jam and chocolate chips. Bake about 10 minutes or until meringue is brown.
Cool completely.
Cut into 1 1/2 inch squares.
