Tie cinnamon, cloves, and allspice loosely in a clean white cloth to make a spice bag.
Add spice bag, sugar, and mace to juice. Bring slowly to the boiling point. Simmer for about 15 minutes. Remove spices. Serve hot or chilled.
Yield: 2 1/2 gallons (80 servings)
NOTE: If a very sweet cider is used, omit or reduce brown sugar.
