Roll the dough out to a rectangle 12" X 20". Combine the cheese with the spices and sprinkle half onto to the pastry sheet. Use the rolling pin to press the cheese into the pastry. Turn the pastry over and repeat with the other half of the cheese. Cut the pastry cheese into 3 rectangles 4" X 20" and then cut each sheet into 60 - 4" strips. Line the sheet pans with parchment and twist the pastry before laying it out. Continue with the rest of the pastry, leaving 1/2" between each one. When they are all finished, let them rest in the refrigerator for 1 hour before baking. Preheat the oven to 400 degrees F and bake the pastries for 10 minutes. They should become golden brown and the cheese should be very aromatic. Allow them to cool to room temperature, then store in an air tight container.
