  1. Remove eggs from refrigerator and prepare only amount needed.
  2. Break eggs into a clean sanitized mixing bowl. Beat slightly on medium speed.
  3. Combine milk, non-fat dry milk, lemon juice, salt, pimento, and green pepper.
  4. Melt margarine and divide equally into steamtable pans. (12x20x2)
  5. Bake in a preheated 350 degree oven for 40-50 minutes. Stirring occasionally
Yield: 100 (1/4 cup serving)
