5 | oz. | lightly packed brown sugar (1 cup) |
1 | cup | molasses |
1¼ | cup | finely chopped onion |
1½ | lbs. | salt pork (cut in squares and ¼ inch thick) |
Soak beans overnight in cold water. Drain; add fresh water and bring to boil. Slow boil 1 hour. Drain again. Put beans in 12x20 baking pan. Stir seasonings together. Sprinkle over beans. Sprinkle sugar over beans, pour on molasses. Sprinkle onion on top. Add enough water to come to top of beans. Bake, covered, in moderate oven (350°) for 3 hours. Add water if needed to keep from becoming dry. Cover beans with pork and return to oven for 30 minutes or until pork is browned and water reduced.
