Sicilian Cheese Cake

Here is a yummy desert. Cheesecake is one of my favorites.
1 3/4 | lbs. | ricotta cheese |
2 | cups | granulated sugar |
2 | cups | chocolate chips |
2 | teaspoons | vanilla extract |
1 | lb. | diced orange and citron fruit |
1 | cup | confectionary sugar

1 | | pound sponge cake |
5 | tablespoons | maraschino liquor or a rum flavored liquid mix |
- Beat ricotta cheese in a large bowl until smooth. Add sugar, chocolate chips, and 3/4 of the diced fruit and vanilla extract. Thoroughly mix by hand until all ingredients are well mixed and smooth.
- Slice sponge cake into three even layers. Place the first layer in a round bowl, 10 inches in diameter. Moisten the layer with the liquid mix then add a layer of cheese mixture, smoothing it down neatly with the blade of the knife.
- Repeat this process on the second layer. Cover with remaining slice of sponge cake. Moisten and chill for 3 to 4 hours or overnight.
>li>To remove turn bowl upside down onto plate.Carefully lift off the bowl.
- Sprinkle the cake with confectioners sugar, decorate with reserved pieces of fruit and serve immediately.
