RICOTTA CAKE

| 1 | box | yellow cake mix |
| 3 | | eggs |
| 1 pt. | (2 c.) | Ricotta cheese |
| 1/2 | cup | sugar |
| 1 | tsp. | Amaretto or vanilla |
- Prepare cake mix as directed on the box, using 2 of the
eggs.
- Pour into a greased and floured Bundt pan or 9 x 13-inch
pan.
- Combine Ricotta cheese, 1 egg, sugar and Amaretto or
vanilla.
- Spoon this mixture over the cake batter.
- Bake at 350 degrees for 55 to 60 minutes. Cool.
- Dust with powdered sugar and a little lemon peel, if you desire.
