4 | eggs | |
1 | small can | mandarin oranges, undrained |
1 | container | CoolWhip (8 ounce) |
2 1/2 | C | pineapple, well drained |
1 | box | instant vanilla pudding mix (small size) |
Beat cake mix, eggs and oranges for 2 minutes medium speed.
Preheat oven to 350 degrees.
Bake in a 9x13" well greased pan (Use Pam or equivalent)for 30 to 40 min. Let cool.
FROSTING:
Mix pineapple and pudding mix; then fold in the Cool Whip topping. Spread over cooled cake.
Decorate with flaked coconut and orange slices (optional).
Refrigerate.

NOTES: For lower fat, substitute 1/2 cup applesauce for the 1/2 cup oil, 1 egg & egg substitute to equal 3 eggs, & no fat CoolWhip
