This makes a very thick batter so if you use a mixer use a heavy duty one. However, once you fold in the apples and bake it, it becomes quite moist and soooo delicious.

3		Eggs
1 1/4	cup	Oil
2	cup	Sugar
2 1/2	cup	Self rising flour
2	medium	Apples, peeled, cored and chopped
1	cup	shredded coconut
1	cup	chopped nuts

• Blend eggs, oil, and sugar until creamy.
• Add flour a little at a time. Blend well. Batter will be very stiff.
• Fold in apples, coconut and nuts.
• Pour in tube pan and bake at 350 degrees for 1 hour or until pick inserted in center comes out clean.
• Remove from pan after cooling for 30 min.

  Note: if cake browns too fast cover with foil.
