PEACH CAKE SUPREME

Note: If you can't find the Raspberry flavored peaches use regular sliced peaches in a can.

1 | can (29 ounces) | DelMonte Raspberry Flavored peaches, sliced |
1 | cup | all-purpose flour |
2/3 | cup | sugar |
1 | teaspoon | baking powder |
1/4 | teaspoon | salt |
1/2 | cup | Parkay margarine, softened (regular not the lite) |
1 | teaspoon | vanilla extract |
2 | | eggs |
| Filling: | |
1/3 | cup | sugar |
1/4 | teaspoon | salt |
1/4 | cup | dairy sour cream |
1 | | egg |
1 | package (3 ounces) | cream cheese, softened. |
Topping: | | |
1 | cup | dairy sour cream |
1/4 | cup | firmly packed brown sugar. |
- Prepare Filling and set aside. Drain peaches, reserving 1 tablespoon syrup; set aside.
- For the crust:
- blend together the peach syrup, flour, sugar, baking powder, salt, margarine, vanilla and eggs in a large
bowl. Beat at medium speed, scraping bowl occasionally, for 3 minutes.
- Spread evenly on bottom and sides of greased 10-inch pie pan.

For the Filling:

In small bowl of electric mixer, combine sugar, salt, dairy sour cream, egg and cream cheese, softened. Beat at medium speed 3 minutes, or until smooth and creamy.

Pour filling into crust and bake in preheated moderate oven (350° F.) for 25 minutes, or until crust is light golden brown. Top with drained peach slices.

For the Topping:

Mix well dairy sour cream and firmly packed brown sugar.

Prepare Topping and spoon over peaches. Bake 5 minutes longer, then chill.
MAKES ONE 10-INCH ROUND CAKE
