Oatmeal Cake

Oatmeal Cake |
1¼ | C | Boiling water |
1 | | Rolled oats quick |
1/2 | C | Shortening |
1 | C | Brown sugar |
1 | C | White sugar |
2 | | Eggs |
1 1/3 | C | Flour |
1/2 | tsp | Cinnamon |
1 | tsp | Soda |
1/2 | tsp | Salt |
- Pour boiling water over quick cooking oats and let stand.
- Cream together shortening, sugars and eggs. Add flour, cinnamon, soda and salt. Mix oats into batter.
- Bake in greased and floured pan for 35 minutes (I use loaf
bread pan) in 350 degree oven. While still warm spread icing over.
Icing |
6 | tbsp | Butter |
3/4 | C | Brown sugar |
1/4 | C | Evaporated milk |
1 | C | Coconut |
1 | C | Nuts--chopped |
1 | tsp | Vanilla |
- Mix all icing ingredients toether. Spread on warm cake. Place under broiler until brown.
