LOW FAT CHOCOLATE SNACK CAKE

| | Vegetable cooking spray |
1 | cup | water |
2/3 | cup | unsweetened cocoa |
1/2 | cup | margarine |
2 | cups | all-purpose flourr |
1/2 | cup | sugar |
1 | tsp. | baking soda |
1/2 | tsp | salt |
4 | | egg whites |
1/2 | cup | non-fat vanilla yogurt |
- Preheat oven to 375 degrees. Spray 15 x 10 inch baking pan with vegetable cooking spray.
- In large saucepan, combine cup of water with 2/3 cup unsweetened cocoa and 1/2 cup margarine. Cook over medium heat, stirring constantly,
until chocolate mixture begins to boil.
- Remove from heat and stir in 2 cups all-purpose flour, and 1/2 cup sugar, followed by 1 teaspoon baking soda and 1/4 teaspoon salt. Add 4 egg whites and 1/2 cup of non-fat vanilla-flavored yogurt.
- Mix the ingredients on the low speed of an electric mixer. Pour the batter into the pan and bake mixture for 20 to 25 minutes or until the
cake tests done.
- Let cool for about 10 minutes and remove from pan. Once cake is cooled, cut cake into heart shaped snack cakes.
- Top with fat-free whipped topping, fat-free vanilla ice cream, fresh fruit or powdered sugar.
