Lemon Pudding Cake

1 1/2 | tablespoons | butter |
3/4 | cup | sugar |
1 | teaspoon | lemon rind |
3 | | egg yolks |
1/8 | | teaspoon | salt |
3 | tablespoons | plain flour |
1/3 cup | lemon juice |
1 cup milk |
3 | | egg whites |
- Cream butter and sugar, stir in lemon rind. Add egg yolks, beat until
well blended. Add flour, alternating with lemon juice and milk. Add salt
to egg whites and beat until stiff. Fold in lemon mixture. Pour in
buttered dish or deep pan. Set dish in a pan of hot water, bake at 350
for 40 minutes.
