Lazy Daisy Cake

2 | | Eggs |
1 | cup | sugar |
1 | tsp | Vanilla |
1 | cup | flour |
1 | tsp | baking powder |
1/4 | tsp | salt |
1/2 | cup | milk |
2 | Tbsp | butter or margarine |
TOPPING: | | |
1/2 | cup | brown sugar |
1/4 | cup | butter, melted |
3 | Tbsp | Cream |
3/4 | cup | 3/4 Cup coconut |
1/2 | cup | chopped nuts (optional) |
Combine eggs, sugar and vanilla, beating until thick. Add sifted flour, baking powder and salt. Beat well.
Heat milk and butter to boiling point and add to batter. Mix well.
Bake in a greased 8x8" baking pan at 350° for 30 to 40 minutes.
For the topping, combine sugar, butter, cream, coconut and nuts (if used).
Frost while cake is still warm and place under broiler for 1 to 2 minutes or until frosting bubbles and coconut is golden brown. Cool completely on rack before cutting.
NOTE: This recipe may be doubled and baked in a 9x13" pan.
