Kentucky Jam Cake

Kentucky Jam Cake |
1 | c. | soft butter |
2 | c. | sugar |
5 | | eggs |
1 | c. | seedless blackberry jam |
3 | c. | flour |
1 | tsp. | soda |
1/2 | tsp. | salt |
1/2 | tsp. | cloves |
1/2 | tsp. | allspice |
1 | c. | buttermilk |
1 | c. | chopped nuts |
1 | c. | chopped raisins |
- Cream butter and sugar until light.
- Add eggs (1 at a time); beat well.
- Add jam; beat well.
- Add flour, soda, salt, cloves and allspice alternately with buttermilk; beat until smooth.
- Stir in nuts and raisins.
- Pour into 4 (9-inch) pans.
Bake at 325 degrees for 35 minutes.
Caramel Frosting for Kentucky Jam Cake |
2 | c. | packed light brown sugar |
1 | c. | sugar |
2 | Tbsp. | corn syrup |
3 | Tbsp. | butter |
| dash of | salt |
2/3 | c. | cream |
1 | tsp. | vanilla |
- In large saucepan, mix ingredients.
- Bring to a boil, cover and cook 3 minutes.
Uncover and cook to 236 degrees on candy thermometer or until soft ball forms when dropped in cold water.
- Cool 3 minutes.
Beat until thick.
- If too stiff, add a little hot water.
