Orange 'Kiss-Me' Cake

Delicious -- mother has made this since I was little.
The Cake |
2 | cups | flour |
1 | tsp | soda |
1/2 | cup | shortening |
1 | cup | sugar |
2 | | eggs |
1 | cup | raisins, ground |
1 | cup | milk |
1 | | large orange |
- Juice the orange and reserve juice for the topping.
- Grate the orange rind and pulp with the raisins. Set aside.
- Cream shortening and sugar
- Blend in eggs, one at a time
- Add the ground orange and raisins
- Add milk and dry ingredients alternately to creamed mixture, beginning and ending with dry ingredients
- Blend thoroughly after each addition
- Bake in moderate (360° F.) oven for 30-35 minutes
The Topping |
1/3 | cup | of the reserved orange juice |
1/4 | cup | sugar |
1 | tsp | cinnamon |
1/4 | cup | walnuts, chopped |
- Drip orange juice over warm cake
- Sprinkle with sugar-cinnamon-nut topping
