Idaho Potato Cake

1	C	butter or margarine, softened
2	C	sugar
2		eggs
1	C	cold mashed potatoes
1	tea	vanilla extract
2	C	all-purpose flour
1/4	C	baking cocoa
1	teas	baking soda
1	C	milk
1	C	Chopped nuts

In a mixing bowl, cream butter and sugar until fluffy.

Add eggs, one at a time, beating well after each addition.

Blend in potatos and vanilla.

Combine flour, cocoa and baking soda; add alternately with milk, blending well after each addition. Stir in nuts.

Pour into a greased 13"x9"x2" baking pan and bake at 350 degrees for 40-45 min or until cake tests done. Cool on a wire rack.

Yield: 12-16 servings
