Idaho Potato Cake

  • In a mixing bowl, cream butter and sugar until fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Blend in potatos and vanilla.
  • Combine flour, cocoa and baking soda; add alternately with milk, blending well after each addition. Stir in nuts.
  • Pour into a greased 13"x9"x2" baking pan and bake at 350 degrees for 40-45 min or until cake tests done. Cool on a wire rack.
  • Yield: 12-16 servings
