Hummingbird Cake

3 | C | flour |
1 1/2 | C | oil |
2 | C | sugar |
1 1/2 | tsp | vanilla |
1 | tsp. | salt |
1 | can (8 oz.) | crushed pineapple |
1 | tsp | baking soda |
1 | C | chopped nuts |
1 | tsp | cinnamon |
2 | C | chopped bananas |
3 | | eggs, beaten |
Combine dry ingredients in a large bowl, mixing well. Add eggs and oil,
stirring until moistened.
Stir in vanilla, pineapple, 1 cup nuts and bananas.
Pour into 3 greased 9-inch pans.
Bake at 350° for 25 minutes or until layers test done. Cool in pans for several minutes.
Remove to wire rack to cool completely.
Icing |
2 | box (1 lb. ea.) | confectioner's sugar |
16 | oz | cream cheese, softened |
1 | C | margarine, softened |
2 | tsp | vanilla |
1 | cup | chopped nuts |
- Cream butter, cream cheese, confectioners' sugar and 2 tsp. vanilla in
mixer bowl until light and fluffy.
- Spread over side and top of layers.
- Sprinkle with additional nuts.
