Hoot'N'Hollar Whiskey Cake

A fine loaf cake. Don't think it was that speck of bourbon that made them "hoot n holler". Perhaps it was something they took with it!!!!

1/2 | C | Butter, softened |
1 | C | Sugar |
3 | Large | Eggs |
1 | C | All Purpose Flour |
1/2 | teas | Baking Powder |
1/4 | teas | Salt |
1/2 | teas | Ground Nutmeg |
1/4 | C | Milk |
1/4 | C | Molasses |
1/4 | teas | Baking Soda |
1/4 | C | Bourbon |
3/4 | Lb. | Raisins |
2 | Cs | Chopped Pecans |

- Cream butter; gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Combine next 4 ingredients; add to creamed mixture alternately with milk, beginning and ending with dry ingredients.
- Combine molasses and baking soda; add to creamed mixture.
- Stir in remaining ingredients.
- Pour into a greased and floured 9x5x3 inch loafpan. Bake at 300 degrees F. for 1 hr. and 55 min. or until wooden pick inserted in center comes out clean.
- Refrigerate cake for easier slicing.
Yield 1 loaf
NOTES: If you add some coconut this will be similar to Jack Daniels Tipsy cake.
Wrap the cake in cheesecloth and pour about ¼ cup bourbon over it and let it set in refrigerator for a few days to enhance the flavor.
