German Apple Cake

A German Apple Cake, made with a sugar substitute and suitable for diabetics and weight-watchers, featured apple slices topped with cinnamon.
1/4 | cup | margarine, softened |
2 | tablespoons | strawberry spreadable fruit |
5 | teaspoons | Equal for recipes or 16 packets Equal sweetener or
2/3 cup Equal Spoonful |
1/4 | cup | skim milk |
1 | teaspoon | vanilla |
1 | cup | self-rising flour |
1 | medium | Granny Smith apple |
2 | teaspoons | lemon juice |
1/2 | teaspoon | ground cinnamon |
1/4 | teaspoon | Equal for recipes or 1 packet Equal sweetener or 2 teaspoons Equal Spoonful |
- Beat margarine, spreadable fruit and 5 teaspoons Equal for recipes until creamy. Blend egg, milk and vanilla; add to margarine mixture alternately with flour. (Mixture will be thick).
- Spoon batter into greased and waxed-paper-lined 8-inch round cake pan.
- Peel and core apple and cut into slices; toss with lemon juice. Arrange decoratively over cake batter.
- Bake in preheated 350-degree oven until toothpick comes out clean, about 30 minutes. Turn onto wire rack with apple on top.
- Sprinkle with cinnamon and 1/4 teaspoon Equal for recipes while cake is still warm.
