DIABETIC POUND CAKE

2 | cups | flour |
1/2 | cup | corn oil |
2 | | eggs |
3 | large | bananas |
1 | tsp. | vanilla flavoring |
1 1/2 | cups | pecans or mixed nuts |
1 | tsp. | soda |
1 1/2 | Tbsp. | liquid sugar substitute |
4 | Tbsp. | buttermilk |
1 | cup | raisins |
- Sift flour and soda. Add oil and sugar substitute and mix well until light. Beat eggs and rest of ingredients. Beat until well mixed.
- Pour into loaf pan and bake at 350 degrees for 25
minutes.
