Double Chocolate Cupcakes
1 C + 1	tbsp	All-purpose flour
1	tsp	Baking soda
1/4	tsp	Salt
1/2	C (1 stick)	Butter, softened
1	C	Granulated sugar
2	lg	Eggs
2/3	C	Buttermilk (Mix 2/3 C milk + 1 tsp lemon juice if none on hand)
2	sq	Unsweetened baking chocolate melted & cooled a bit (I use Nestles Choco Bake)
1	tsp	Vanilla extract
1 1/2	C	Semisweet chocolate morsels

• Preheat oven to 325. Line 24 muffin pans with paper liners.
• Mix 1 cup flour, baking soda and salt in small bowl. Beat together butter and sugar at medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition.
• Alternately beat flour mixture and buttermilk into butter mixture. Stir in melted chocolate and vanilla.
• Toss 1 cup chocolate morsels with remaining 1 tbsp of flour and stir into batter. Spoon batter into prepared pans, filling cups 2/3.
• Bake until tops are firm (about 30 minutes). Cool completely.

Frosting
1 1/2	C	Confectionary sugar
2	tbsp	Butter, softened
2	tbsp	Unsweetened cocoa powder
2 1/2	tbsp	Milk

• Mix confectionary sugar, butter, cocoa powder and milk. If too thick add more milk. Frost cupcakes and sprinkle with remaining chocolate morsels.
