I got this recipe from the elf (eat light foods) mail list on the web. This cake is delicious, and can be made lower in fat by eliminating the nuts. Even SAD (standard american diet) people don't realize it is a low fat cake.
1 | box | Devil's Food Cake Mix |
1 3/4 | cup | Water |
1 | cup | Chopped Nuts |
3 | Egg Whites | |
1 | Egg | |
1 | cup | Chocolate semi-sweet pieces |
8 | ozs | Fat-Free Cream cheese, softened |
Preheat oven to 350 degrees. Spray 9 x 11 x 2 pan with non-stick coating. In a large bowl beat cake mix, egg whites and water together until smooth and well mixed. Pour in baking pan. Mix soft cream cheese, sugar and egg together until creamy. Stir in chips and nuts. Drop cream cheese mixture in cake batter by spoonfuls. Bake for 50 minutes or until cake springs back at touch. Cool on wire rack.
