Cajun Cake
From the Kitchen of: Pepper
2 | C | All Purpose Flour |
1 1/2 | C | Sugar |
1 1/2 | teas. | Baking Soda |
| Pinch | Salt |
2 | | Eggs |
1 | Large Can | Crushed Pineapple |
- Mix the cake ingredients together.
- Preheat oven to 350 degrees F.
- Bake in a 9x13 inch pan for 25 min or until pick inserted in center comes out clean.
- Cool for 10 minutes on wire rack before icing.
ICING: |
1 | C | Sugar |
1 | C | Pecans |
1 | Stick | Margarine |
1 | C | Coconut |
1 | Small Can | Pet Evaporated Milk |
- ICING:
- Combine sugar, margarine and Pet milk. Boil for 5 minutes.
- Remove from heat and stir in pecans and coconut.
- Pour over cake.
- Refrigerate.
